Around it she draws on L'Escala anchovies, Empordà olive oil and the day's catch for a suquet de peix or fideuà.
She shops the markets in Palamós, Palafrugell and La Bisbal d'Empordà for vegetables, fish and the makings of an esqueixada, and pours Empordà DO wines to match. For a large group, that might mean platters of prawns and a generous rice to share; for a quieter table, a more refined tasting menu. Either way, the menu follows what looked best that morning.
